While Chemlali olive variey (Mild & Fruity with notes of green apple, almond, and fresh grass) and Chetoui olive variey (Robust & Peppery with intense aromas of green almond and herbs) represent nearly 80% of Tunisian production, recent years have seen a surge in gourmet interest for rare, regional varieties such as Oueslati, Sayali, Chemchali, Zarrazi, etc.
